Soup ingredients

  • 1 cup cooked chicken, shredded
  • 1 cup baby spinach
  • 1 cup gnocchi
  • 1 cup heavy cream
  • to taste salt and pepper
  • to taste fresh parsley, chopped (for garnish)

Preparation

  • In a large pot, heat the olive oil over medium heat. Toss in the diced onion and sauté until translucent, about 4-5 minutes.
  • Add the minced garlic for the last 2 minutes; ensure it is fragrant but not burnt.

Thickening

  • Sprinkle the flour over the onion and garlic, stirring constantly for about 1 minute.

Adding Broth

  • Gradually pour in the chicken broth, stirring until the flour is completely dissolved. Increase the heat to bring the mixture to a gentle boil.

Adding Main Ingredients

  • Add the shredded chicken, baby spinach, and gnocchi. Let it simmer for about 5-7 minutes, or until the gnocchi float to the top.

Final Touches

  • Slowly pour in the heavy cream, stirring continuously until well combined. Season with salt and pepper according to your preference.
  • Ladle into bowls, garnish with fresh parsley, and enjoy your soup.

Notes

You can replace heavy cream with whole milk for a slightly lighter version or use a plant-based substitute for a dairy-free option. Watch gnocchi closely to avoid overcooking.
