Ingredients
  

  • For the Pancakes:
  • 1 cup pancake mix
  • 3/4 cup water
  • 2 tbsp maple syrup
  • 1 tbsp butter or oil for greasing the skillet
  • For the Filling:
  • 4 eggs
  • 4 slices of cheese cheddar or American work well
  • 4 sausage or chicken patties fully cooked
  • 2 tbsp maple syrup optional, for drizzling

  • Prepare the Pancake Batter:
  • In a mixing bowl, combine pancake mix, water, and maple syrup. Stir until smooth.
  • Cook the Pancakes:
  • Heat a non-stick skillet or griddle over medium heat and grease lightly with butter or oil.
  • Pour about 2-3 tablespoons of batter onto the skillet to form small, round pancakes. Use a pancake ring mold for uniform size if desired.
  • Cook until bubbles form on the surface and the edges look set, about 1-2 minutes. Flip and cook for another minute. Repeat to make 8 pancakes.
  • Cook the Eggs:
  • Crack eggs into a bowl, whisk, and season with salt and pepper if desired.
  • Pour the eggs into the skillet and cook as scrambled eggs or in round molds for a perfect fit on the sandwiches.
  • Assemble the Sandwiches:
  • Lay one pancake as the base, top with a slice of cheese, a cooked sausage or chicken patty, and the scrambled egg or egg round.
  • Place another pancake on top to form a sandwich.
  • Optional Maple Drizzle:
  • For extra sweetness, drizzle a small amount of maple syrup onto the egg or patty before topping with the second pancake.
