Prepare the Pancake Batter:
In a mixing bowl, combine pancake mix, water, and maple syrup. Stir until smooth.
Cook the Pancakes:
Heat a non-stick skillet or griddle over medium heat and grease lightly with butter or oil.
Pour about 2-3 tablespoons of batter onto the skillet to form small, round pancakes. Use a pancake ring mold for uniform size if desired.
Cook until bubbles form on the surface and the edges look set, about 1-2 minutes. Flip and cook for another minute. Repeat to make 8 pancakes.
Cook the Eggs:
Crack eggs into a bowl, whisk, and season with salt and pepper if desired.
Pour the eggs into the skillet and cook as scrambled eggs or in round molds for a perfect fit on the sandwiches.
Assemble the Sandwiches:
Lay one pancake as the base, top with a slice of cheese, a cooked sausage or chicken patty, and the scrambled egg or egg round.
Place another pancake on top to form a sandwich.
Optional Maple Drizzle:
For extra sweetness, drizzle a small amount of maple syrup onto the egg or patty before topping with the second pancake.
