  • 1 lb ground chicken
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1 tablespoon olive oil

Preparation

  • In a large mixing bowl, combine the ground chicken, finely chopped onion, minced garlic, dried oregano, salt, black pepper, and paprika. Using your hands, mix thoroughly until well combined.
  • Take small portions of the mixture (about 1 tablespoon each) and roll them into bite-sized balls or shapes.

Cooking

  • In a large skillet, heat the olive oil over medium heat.
  • Working in batches to avoid overcrowding, carefully place the sausage bites in the skillet. Cook for about 4-5 minutes on each side or until golden brown and cooked through (internal temperature should read at least 165°F).
  • Transfer the cooked bites onto a plate lined with paper towels to absorb excess oil, then serve warm with your choice of dipping sauces.

Notes

If using leftover chicken sausage bites, allow them to cool completely before storing in an airtight container. Refrigerate for up to 3 days or freeze for up to 2 months. Reheat in a preheated oven at 350°F for about 10-15 minutes.
