  • 1 lb boneless chicken thighs, cut into bite-sized pieces
  • 1 large onion, finely chopped
  • 3-4 cloves garlic, minced
  • 1 inch piece ginger, grated
  • ½ cup plain yogurt
  • ½ cup heavy cream (or coconut milk for a lighter version)
  • 2 tbsp korma curry paste (halal)
  • 1 tsp turmeric powder
  • 1 tsp garam masala
  • 2 tbsp vegetable oil
  • Fresh coriander, chopped (for garnish)
  • Flatbread or rice, for serving

Preparation

  • Start by ensuring all your ingredients are ready. Chop the chicken, onion, garlic, and ginger, and set them aside.

Cooking

  • In a large pot, heat the vegetable oil over medium heat. Add the finely chopped onions and sauté until they are golden brown, which will take about 5-7 minutes.
  • Stir in the minced garlic and grated ginger, cooking for another minute until aromatic.
  • Add the chicken pieces to the pot. Sauté them for about 5-6 minutes until they are no longer pink.
  • Mix in the korma paste, turmeric powder, and salt, stirring well to combine.
  • Lower the heat and gently mix in the yogurt, followed by the heavy cream or coconut milk. Allow it to simmer for about 15 minutes, letting the flavors meld together.
  • Stir in garam masala before serving. Adjust salt if needed.

Serving

  • Plate your Chicken Korma with fluffy flatbreads or over a bed of rice. Don’t forget to sprinkle fresh coriander on top for an added touch of flavor!

Notes

If you'd like to switch it up, you can use chicken breast instead of thighs for a leaner option. For a vegetarian version, use chickpeas or mixed vegetables. Make sure to sauté the onions until they are truly golden to add depth to the dish.
