Ingredients
  

Main Ingredients

  • 2 cups cooked shredded chicken Use Halal or cooked turkey if preferred.
  • 8 small tortillas (flour or whole wheat) Choose based on preference.
  • 2 cups enchilada sauce Ensure it’s Halal.
  • 1 cup shredded cheese (like cheddar or Monterey Jack) Feel free to use your favorite cheese.
  • 1 cup lettuce, chopped For garnish.
  • 1 cup tomatoes, diced For garnish.
  • 1 small onion, finely chopped For garnish.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a mixing bowl, combine the cooked shredded chicken and half of the enchilada sauce. Stir well until the chicken is evenly coated.

Assembly

  • Take one tortilla and spoon about 1/3 cup of the chicken mixture onto it. Roll it up tightly and place it seam-side down in a greased baking dish. Repeat until all the tortillas and chicken have been used.
  • Pour the remaining enchilada sauce over the rolled tortillas, ensuring they are generously covered. Then sprinkle shredded cheese over the top.

Baking

  • Place the baking dish in the preheated oven and bake for about 20-25 minutes, or until the cheese is bubbling and golden.

Garnishing and Serving

  • Remove the dish from the oven and allow it to cool for a few minutes. Top with fresh chopped lettuce, diced tomatoes, and onions before serving.
  • Dish out generous portions of the enchiladas and enjoy!

Notes

Substitute chicken with turkey or beef if desired. To save time, prepare the filling and roll the enchiladas ahead of time, and freeze them before baking.
