  • 1 lb ground beef (80/20 recommended)
  • 3 large potatoes, diced
  • 1 medium onion, chopped
  • 1 piece bell pepper (any color), diced
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 cup beef broth or water
  • 2 tbsp olive oil

Preparation

  • Start by peeling and dicing your potatoes, chopping the onion, and bell pepper, and mincing the garlic.

Cooking

  • In a large skillet, heat the olive oil over medium-high heat.
  • Add the ground beef to the skillet. Cook until browned, breaking it up with a spoon as it cooks (about 5-7 minutes). If there is excess fat, consider draining it off.
  • Stir in the chopped onions, bell pepper, and minced garlic. Cook until they soften (about 3-4 minutes).
  • Sprinkle in the paprika, salt, and black pepper. Mix everything thoroughly.
  • Toss in the diced potatoes and stir to combine with the beef and veggies. Pour in the beef broth (or water) to help cook the potatoes.
  • Cover the skillet and let it simmer for 10-15 minutes, stirring occasionally, until the potatoes are tender and cooked through.
  • Serve hot, topped with your favorite garnishes like shredded cheese or fresh herbs.

Notes

This dish can also be served alongside a light salad or steamed vegetables. For variation, consider adding chili flakes for spice or swapping potatoes for sweet potatoes.
