Ingredients
  

For the Chicken

  • 4 pieces boneless, skinless chicken breasts
  • ¼ cup honey
  • ¼ cup Dijon mustard
  • 2 tablespoons olive oil
  • to taste Salt and pepper

For the Peach Salad

  • 2 pieces ripe peaches, sliced
  • 5 cups mixed greens (like spinach and arugula)
  • ½ piece red onion, thinly sliced
  • ½ cup feta cheese, crumbled (optional) Can be omitted for a dairy-free version.
  • 2 tablespoons balsamic vinaigrette

Instructions
 

Marinate the Chicken

  • In a medium bowl, whisk together honey, Dijon mustard, olive oil, salt, and pepper. Add the chicken breasts, making sure they are well-coated. Let them marinate for at least 15 minutes to absorb the flavors.

Preheat the Grill

  • Preheat your outdoor grill over medium-high heat. If using a grill pan, heat it on the stove until hot.

Grill the Chicken

  • Place the marinated chicken on the grill and cook for about 6-7 minutes on each side or until the chicken has an internal temperature of 165°F (75°C). Remove from the grill and let it rest for a few minutes.

Prepare the Salad

  • In a large bowl, toss together the mixed greens, sliced peaches, red onion, feta cheese, and a drizzle of balsamic vinaigrette.

Serve

  • Slice the grilled chicken and serve it over the peach salad for a delightful meal. Drizzle any remaining honey mustard sauce over the top if desired. Enjoy!

Notes

For best results, marinate chicken for 2 hours or overnight. Use ripe peaches for a sweeter salad, or substitute with nectarines or plums if peaches aren't available. Store leftovers in an airtight container for up to 3 days.
