  • 4 large Flour tortillas Burrito-sized
  • 2 cups Shredded cheese Cheddar, Monterey Jack, or a blend
  • 1 cup Cooked chicken Or protein of choice (optional)
  • 1 cup Sautéed peppers and onions Or your favorite vegetables
  • 1 cup Refried beans Optional ingredient
  • 1 teaspoon Spices Cumin, chili powder, and garlic powder
  • 2 tablespoons Butter For grilling

Preparation

  • Prepare your fillings: Start by cooking your protein if using, and sauté your vegetables. Season them according to your preference with spices.
  • Assemble your burrito: Lay a flour tortilla flat on a clean surface. Spread a layer of refried beans in the center (if using), followed by a generous handful of shredded cheese, your protein, and sautéed veggies.
  • Roll it up: Carefully fold the sides of the tortilla over the filling, then roll it from the bottom, ensuring it’s secure.
  • Grill the burrito: In a skillet, melt a little butter over medium heat. Add the burrito seam-side down and grill for about 3-4 minutes until golden brown. Flip it over and grill for another 3-4 minutes until the cheese is melty.
  • Serve once golden and crispy: Slice it in half and enjoy while still warm!

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. For longer storage, freeze wrapped individually for up to 3 months. To reheat, use medium heat in a skillet for about 10 minutes or microwave for 1-2 minutes.
