Ingredients
  

For the Marinade

  • 1/4 cup olive oil Extra virgin recommended
  • 1/4 cup lemon juice Freshly squeezed is best
  • 2 cloves garlic, minced For aromatics
  • 1 tablespoon dried oregano Adds Greek flavor
  • 1 teaspoon salt To taste
  • 1/2 teaspoon black pepper To taste
  • 1/2 teaspoon paprika For color and taste

For the Kabobs

  • 2 pounds chicken breast, cut into cubes Can substitute with chicken thighs
  • Skewers (wooden or metal) If using wooden skewers, soak in water for 30 min

Optional Vegetables

  • bell peppers, onions, or cherry tomatoes For added color and flavor

Instructions
 

Preparation

  • In a large mixing bowl, whisk together the olive oil, lemon juice, minced garlic, oregano, salt, black pepper, and paprika until well combined.
  • Add the chicken cubes to the marinade, ensuring each piece is well-coated. Cover and let it marinate in the refrigerator for at least 1 hour, or ideally overnight.
  • If using wooden skewers, soak them in water for about 30 minutes to prevent burning on the grill.

Assembly

  • Thread the marinated chicken onto the skewers, alternating with bell peppers, onions, or cherry tomatoes if desired.

Cooking

  • Preheat your grill to medium-high heat.
  • Place the kabobs on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has a nice char.

Serving

  • Remove from the grill and let them rest for a few minutes. Serve warm with tzatziki or your favorite dipping sauce.

Notes

Marinate for longer if you can for better flavor. Store leftovers in an airtight container for up to 3 days, or freeze for up to 2 months. Reheat in the oven or grill for best results.
