Ingredients
  

For the Scones

  • 2 cups gluten-free flour Use a good quality gluten-free flour blend
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup cold butter, cubed Ensure butter is cold for flaky scones
  • 1/2 cup milk Any type of milk can be used
  • 1 large egg
  • 1 tablespoon lemon juice Fresh lemon juice is preferred
  • 1 tablespoon lemon zest Zest from a fresh lemon

For the Glaze

  • 1 cup powdered sugar
  • 2-3 tablespoons lemon juice Adjust according to desired thickness

Preparation

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the gluten-free flour, sugar, baking powder, and salt. Whisk until well-mixed.
  • Add the cubed cold butter to the dry ingredients. Work the butter into the mixture until it resembles coarse crumbs.
  • In a separate bowl, whisk together the milk, egg, lemon juice, and lemon zest. Pour into the flour mixture and stir gently until just combined. Avoid overmixing.
  • Turn the dough onto a lightly floured surface (use gluten-free flour). Pat down into a round about 1-inch high. Cut into wedges or fun shapes.
  • Transfer the scones to the prepared baking sheet and bake for 15-20 minutes, or until golden brown.

Glazing

  • While baking, whisk together the powdered sugar and lemon juice until smooth. Adjust thickness if needed.
  • Allow scones to cool for a few minutes before drizzling the glaze over them.
  • Serve warm and enjoy.

Notes

To maintain scone flakiness, keep butter cold and avoid overmixing. Experiment with add-ins like blueberries or cranberries.
