Ingredients
  

For the chicken and potatoes

  • 2 pounds boneless, skinless chicken breasts
  • 1 pound baby potatoes, halved
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Preparation

  • Halve the baby potatoes and mince the garlic.
  • Place the halved potatoes at the bottom of your crockpot.
  • Position the boneless, skinless chicken breasts on top of the potatoes.

Mixing the Sauce

  • In a bowl, whisk together the chicken broth, minced garlic, grated Parmesan cheese, Italian seasoning, salt, and pepper.
  • Pour the garlic-Parmesan mixture over the chicken and potatoes.

Cooking

  • Set your crockpot on low and cook for 6 to 8 hours, or until the chicken is tender.

Serving

  • Garnish with fresh parsley if desired and enjoy!

Notes

For creaminess, add cream cheese or heavy cream. Add sun-dried tomatoes or spinach for flavor. Avoid overcooking to keep chicken moist. Substitute thighs for breasts or use sweet potatoes if preferred. Leftovers can be stored in the fridge for up to 3 days or frozen for 3 months.
