Ingredients
  

For the Brownie Layer

  • 1 cup semi-sweet chocolate chips Use high-quality chocolate for best flavor.
  • 1/2 cup unsalted butter Melt with chocolate chips.
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt

For the Cookie Layer

  • 1/2 cup unsalted butter Softened.
  • 1/2 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips Optional, for added richness.

Preparation

  • Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  • In a microwave-safe bowl, melt 1/2 cup of unsalted butter and 1 cup of chocolate chips together until smooth.
  • Stir in 1 cup of granulated sugar, followed by 2 eggs and 1 teaspoon of vanilla extract. Mix well.
  • Stir in 1/2 cup of flour and 1/4 teaspoon of salt until fully combined.
  • In a separate bowl, cream together 1/2 cup of softened butter, 1/2 cup of brown sugar, and 1/4 cup of granulated sugar until fluffy.
  • Beat in 1 egg and 1 teaspoon of vanilla extract.
  • Gradually mix in 1 1/4 cups of flour, 1/2 teaspoon of baking soda, and 1/2 teaspoon of salt until fully combined.
  • Add chocolate chips if desired.

Baking

  • Pour the brownie batter into the prepared baking pan, spreading it evenly.
  • Drop dollops of cookie dough over the brownie layer and gently swirl the two together using a knife.
  • Bake in the preheated oven for 25-30 minutes. To check for doneness, insert a toothpick into the center; it should come out slightly moist with a few crumbs.

Cooling and Serving

  • Let the brookies cool in the pan for about 10 minutes, then lift them out using the parchment paper.
  • Allow them to cool completely on a wire rack before slicing into squares.
  • Serve warm, optionally with vanilla ice cream or drizzled with caramel sauce.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for a week. Reheat in microwave or preheated oven.
