Ingredients
  

Noodles and Broth

  • 8 oz Pancit noodles (or rice noodles)
  • 1 cup chicken broth (or vegetable broth for a vegetarian option)

Vegetables

  • 1 large carrot, julienned
  • 2 cups cabbage, shredded
  • 1 medium onion, sliced
  • 1 bell pepper sliced
  • 3 stalks green onions, chopped

Aromatics and Seasoning

  • 4 cloves garlic, minced
  • 2 tbsp vegetable oil
  • 2 tbsp soy sauce

Preparation

  • Soak the Pancit noodles in a bowl of warm water for about 10-15 minutes, or until softened. If using rice noodles, follow the package instructions. Drain and set aside.

Cooking

  • In a large skillet or wok, heat the vegetable oil over medium heat. Add minced garlic and sliced onion. Sauté until the onion becomes translucent and fragrant, about 2-3 minutes.
  • Add the julienned carrots, shredded cabbage, and sliced bell pepper. Stir-fry for about 5-7 minutes, until the veggies are bright and slightly tender but still crunchy.
  • Add the soaked noodles to the skillet, pouring in the soy sauce and chicken broth. Toss everything together gently to avoid breaking the noodles. Cook for an additional 5 minutes, or until the noodles are heated through.
  • Taste the noodles and season with salt and pepper as desired. Add chopped green onions just before serving for an extra layer of flavor and color.
  • Serve your Easy Filipino Pancit Noodles warm, garnished with more green onions or sesame seeds if desired.

Notes

For substitutions, use different vegetables like broccoli or snap peas. To retain texture, add crunchier vegetables later in cooking.
