  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp coriander
  • Salt & pepper to taste
  • 1/2 cup breadcrumbs
  • Olive oil for frying
  • Mixed greens or lettuce
  • Cherry tomatoes, halved
  • Cucumber, diced

Tahini Dressing Ingredients

  • 1/3 cup tahini
  • 2 tbsp lemon juice
  • 1 clove garlic, minced
  • Water to thin
  • Salt to taste

Instructions
 

Preparation

  • In a food processor, combine chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, salt, and pepper. Pulse until a rough dough forms.
  • Transfer the mixture to a bowl, mix in the breadcrumbs, then shape the mixture into small balls or patties.

Cooking

  • In a frying pan, heat olive oil over medium-high heat to cover the bottom.
  • Once the oil is hot, carefully add the falafel balls. Fry them for about 3-4 minutes on each side, until golden brown and crispy. Remove and place them on a paper towel to drain excess oil.

Tahini Dressing Preparation

  • In a small bowl, combine tahini, lemon juice, garlic, and salt. Gradually whisk in water until you reach your desired consistency.

Assembly

  • In a bowl, layer fresh greens, diced cucumber, and cherry tomatoes. Top with the crispy falafel and drizzle the creamy tahini dressing over everything.

Notes
