Ingredients
  

For the Chicken Mixture

  • 2 cups cooked chicken, shredded Ensure chicken is Halal-certified for a Halal option.
  • 1/2 cup dill pickle relish
  • 1/4 cup ranch dressing Look for Halal-approved ranch dressing if necessary.

For Assembly

  • 8 pieces taco-sized tortillas (preferably whole wheat or corn)
  • shredded lettuce
  • chopped tomatoes
  • shredded cheese (your choice, Halal-certified)

Preparation

  • In a large bowl, combine the shredded chicken, dill pickle relish, and ranch dressing. Mix well until the chicken is fully covered.

Cooking

  • Heat a small skillet over medium heat. Place one tortilla in the skillet for about 30 seconds on each side until warm and pliable. Repeat with the remaining tortillas.

Assembly

  • Take a warm tortilla and spoon a generous portion of the chicken mixture onto it. Top it off with shredded lettuce, chopped tomatoes, and a sprinkle of cheese.
  • Fold the tortillas in half and serve immediately while warm.

Notes

These tacos are best enjoyed fresh. Store leftover chicken mixture in an airtight container in the refrigerator for up to 3 days. Reheat the mixture gently before assembling with fresh toppings.
