  • 3 large ripe bananas (mashed) Choose bananas with brown spots for best results.
  • 1/3 cup melted coconut oil (or any neutral oil) Coconut oil will add a subtle flavor.

Dry Ingredients

  • 1 teaspoon baking soda Acts as a leavening agent.
  • pinch salt Balances sweetness.
  • 1 teaspoon ground cinnamon Optional for extra flavor.
  • 1 1/2 cups all-purpose flour Can substitute with whole wheat for a healthier option.
  • 1/2 cup chopped nuts or walnuts Optional for added texture.

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan with coconut oil.
  • In a large mixing bowl, mash the ripe bananas with a fork until smooth. Stir in melted coconut oil and vanilla extract.
  • Sprinkle baking soda and salt over the banana mixture and stir until just combined, avoiding overmixing.
  • Gently fold in the all-purpose flour until no streaks remain. Add walnuts or nuts if using.
  • Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  • Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the loaf cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.

Notes

Store in an airtight container in the refrigerator for 4-5 days or freeze wrapped slices for up to 3 months. Reheat in a toaster, oven, or microwave.
