  • 1 pound boneless, skinless chicken breast, sliced into strips
  • 2 pieces bell peppers, any color, sliced
  • 1 medium onion, sliced
  • 3 tablespoons olive oil

Spices

  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika (or regular paprika)

For Serving

  • Tortillas for serving
  • Chopped cilantro for garnish (optional)
  • Lime wedges for serving

Instructions
 

Preparation

  • Preheat your oven to 425°F (220°C).
  • In a large bowl, combine olive oil, chili powder, cumin, garlic powder, smoked paprika, salt, and pepper to make the marinade.
  • Add the sliced chicken, bell peppers, and onion to the bowl, tossing well to coat.
  • Line a sheet pan with parchment paper or lightly grease it. Spread the marinated mixture evenly across the pan.

Cooking

  • Bake for about 20 minutes, or until the chicken is cooked through and the vegetables are softened.

Serving

  • Remove from the oven and let cool for a few moments. Heat tortillas in the oven or microwave, then assemble fajitas with the chicken and vegetable mixture, topped with cilantro and fresh lime juice.

Notes

Substitute chicken with beef or shrimp for different flavors. Ensure even cutting of ingredients to avoid uneven cooking.
