Preparation

  • Start by slicing the onion, mincing the garlic, and chopping the carrots and potatoes into chunks.
  • Generously rub salt and pepper over the chuck roast, ensuring it’s well-seasoned.
  • In your crockpot, place the sliced onion first, followed by the carrots and potatoes, creating a bed for the roast.
  • Set the seasoned chuck roast on top of the veggies.
  • Pour the beef broth around the roast and sprinkle the minced garlic and dried thyme on top.
  • Cover and cook on low for 7 to 8 hours or high for 4 to 5 hours until the roast is fork-tender.
  • Once cooked, gently pull apart the roast and serve it with the veggies, drizzling some of the cooking liquid on top for extra flavor.

Notes

For extra flavor, consider browning the roast in a skillet before placing it in the crockpot. Use a meat thermometer to ensure your roast reaches an internal temperature of 145°F. To thicken juices for a gravy, whisk in cornstarch slurry in the last 30 minutes of cooking.
