  • 2 cups cooked and shredded chicken
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/2 cup taco seasoning
  • 12 small corn or flour tortillas
  • Cooking oil for frying Use enough to cover about a half-inch in the skillet

Preparation

  • In a bowl, combine the cooked and shredded chicken with taco seasoning and shredded cheese. Mix until well combined.
  • In a dry skillet, warm the tortillas for about 30 seconds on each side to make them more pliable for rolling.
  • Take about 2 tablespoons of the chicken mixture and place it in the center of a tortilla. Roll it up tightly, ensuring to tuck in the sides as you go. Repeat with remaining tortillas.

Cooking

  • In a large skillet, heat about a half-inch of cooking oil over medium heat until hot.
  • Carefully place the taquitos seam-side down in the hot oil. Fry for about 3-4 minutes on each side or until golden and crispy. Do not overcrowd the pan.
  • Remove taquitos from the skillet and place on a paper towel-lined plate to drain excess oil. Serve warm with your favorite toppings.

Notes

Ingredient substitutions: Use shredded beef or beans for a vegetarian twist. Timing adjustments: Don’t rush the warming of tortillas to prevent cracking. Check oil temperature with wooden chopsticks; if it bubbles around the stick, it's ready.
