  • ½ cup chia seeds Use your favorite type of chia seeds.
  • 2 cups milk of your choice (almond milk, coconut milk, or regular dairy milk) Choose based on dietary preferences.
  • cups fresh strawberries, hulled and sliced Set aside a few for garnish.
  • ¼ cup honey or maple syrup Maple syrup can be used for a vegan option.
  • 1 teaspoon vanilla extract For flavor enhancement.
  • A pinch salt

Preparation

  • Hull and slice the fresh strawberries. Set aside a small handful for garnish later on.
  • In a large mixing bowl or jar, whisk together the milk, honey or maple syrup, vanilla extract, and a pinch of salt until smooth.
  • Slowly incorporate the chia seeds into the liquid mixture, whisking continuously to prevent clumping.
  • Cover the bowl or jar and refrigerate for at least 2 hours, or overnight for the best results.
  • Once the chia pudding has set, stir well, then top with additional fresh strawberries and any other toppings you desire, such as granola or nuts.

Notes

Store in an airtight container in the refrigerator for up to 5 days. This dish doesn’t freeze well. Stir before serving.
