  • 1 cup Arborio rice
  • 4 cups chicken or vegetable broth Use high-quality broth for better flavor.
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup dry white wine Optional for added flavor.
  • 1 cup freshly grated Parmesan cheese Adds umami flavor.
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Preparation

  • In a saucepan, heat the chicken or vegetable broth over medium heat. Keep it simmering on the stovetop.
  • In a heavy-bottomed pot, add olive oil and butter over medium heat. Once melted, add the chopped onion and sauté until translucent, about 4-5 minutes.
  • Add minced garlic and cook for an additional 1-2 minutes.
  • Add the Arborio rice to the pot, stirring constantly for 2-3 minutes until well-coated with oil and slightly translucent.
  • Pour in the white wine (if using) and let it simmer until mostly evaporated, stirring frequently.
  • Begin adding the hot broth, one ladle at a time, stirring continuously until the liquid is mostly absorbed before adding the next ladle. Repeat this for 18-20 minutes or until the rice is al dente and creamy.
  • Remove the pot from heat, stir in the freshly grated Parmesan cheese, and season with salt and pepper.
  • Garnish with fresh parsley and serve immediately.

Notes

For perfect risotto, stir constantly to release starch and achieve a creamy texture. Store leftovers in an airtight container for up to 3 days and reheat with a splash of broth or water.
