Ingredients
  

For the Soup

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 package 9 ounces refrigerated cheese tortellini
  • 1 cup heavy cream
  • 1 cup spinach
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Cooking the Soup

  • In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the diced onion and sauté until it's translucent, about 5 minutes.
  • Toss in the minced garlic and heat for another minute until fragrant.
  • Pour in the 4 cups of chicken broth and bring to a boil.
  • Add the shredded cooked chicken and the package of cheese tortellini to the boiling broth. Cook according to the tortellini package instructions, usually around 3-5 minutes, until they are tender.
  • Reduce the heat, and stir in the 1 cup of heavy cream, allowing it to meld beautifully with the other ingredients.
  • Toss in the spinach and season with salt and pepper to taste. Let it simmer for an additional 2-3 minutes until the spinach has wilted.
  • Ladle the soup into bowls and garnish with a generous sprinkle of grated Parmesan cheese. Enjoy your meal warm, surrounded by loved ones!

Notes

Substitutions: Use halal chicken and cheese tortellini for a halal-friendly option or coconut cream for a dairy-free version. Avoid overcooking the tortellini to prevent mushiness. Add spinach right before serving for freshness.
