Preparation

  • Preheat your oven to 350°F (175°C). Line a muffin tin with silicone or paper liners if desired.
  • In a large bowl, crack the eggs and whisk them together until well beaten.
  • Stir in the cottage cheese thoroughly until it blends with the eggs, creating a creamy mixture.
  • Fold in the shredded cheese, diced bell peppers, and chopped green onions. Season with salt and pepper to taste.

Baking

  • Pour the mixture evenly into the muffin tin, filling each cup about 3/4 full.
  • Place the muffin tin in the oven and bake for about 20 minutes or until the bites are set and slightly golden on top.
  • Let the egg bites cool for a few minutes before gently removing them from the tin. They’re now ready to be savored!

Notes

Feel free to personalize with different cheeses or veggies. Store leftovers in an airtight container for up to 4 days, or freeze for longer storage.
