Preparation

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper for easy cleanup.
  • In a mixing bowl, combine the cottage cheese, eggs, vanilla extract, baking powder, and salt. Use a hand mixer or blender to blend until the mixture is smooth.
  • Gently fold in the blueberries, ensuring they are evenly distributed throughout the batter. Be careful not to crush them if you’re using fresh ones.
  • Using a spoon or a scoop, drop dollops of the batter onto the prepared baking sheet. Each dollop should be about 2-3 inches apart.

Baking

  • Place the baking sheet in the oven and bake for 20-25 minutes, or until golden brown on top.

Cooling and Serving

  • Allow the cloud bread to cool on a wire rack before serving. Enjoy warm or at room temperature.
