Preparation

  • If using fresh corn, ensure it’s well-shucked and kernels are cut off the cob. If using frozen corn, do not thaw; just measure directly from the bag.
  • In a large bowl, whisk together the flour, baking powder, salt, pepper, and garlic powder until evenly combined.
  • In a separate bowl, mix the milk and eggs until well blended. Pour this mixture into the dry ingredients and stir lightly to combine. Be careful not to overmix; it’s okay if there are some lumps.
  • Fold in the corn gently until the mixture is consistent.

Cooking

  • In a large skillet over medium heat, pour in enough oil to cover the bottom. Allow the oil to get hot but not smoking—test it by dropping in a small spoonful of the batter; if it bubbles instantly, you’re good to go!
  • Use a tablespoon to drop spoonfuls of batter into the skillet, flattening them slightly with the back of the spoon. Fry for about 3-4 minutes on each side until golden brown.
  • Once cooked, remove them and place them on paper towels to drain any excess oil.

Serving

Notes

Use the freshest corn possible for the best flavor. A few lumps in the batter are fine and will make your fritters fluffier. Keep an eye on the oil temperature to ensure that your fritters don’t burn. Try adding chopped jalapeños for a spicy kick or fresh herbs like cilantro for an added burst of flavor. Store leftovers in an airtight container for 3-4 days or freeze for up to 3 months.
