Ingredients
  

For the marinade

  • 2 limes Juice of 2 limes Freshly squeezed
  • 1/4 cup fresh cilantro Chopped
  • 2 tablespoons olive oil Extra virgin preferred
  • 3 cloves garlic Minced
  • 1 teaspoon cumin
  • Salt and pepper to taste

Main ingredients

  • 4 pieces boneless, skinless chicken breasts About 1.5 pounds

Preparation

  • In a bowl, combine lime juice, chopped cilantro, olive oil, minced garlic, cumin, salt, and pepper. Whisk everything together until well mixed.
  • Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring it’s well coated. Let it marinate in the refrigerator for at least 15 minutes (or up to 2 hours for deeper flavor).

Cooking

  • Preheat a grill or stovetop grill pan over medium-high heat. Remove the chicken from the marinade, allowing excess marinade to drip off. Discard the marinade.
  • Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).

Serving

  • Once cooked, remove the chicken from the grill and let it rest for 5 minutes. Slice and serve with extra lime wedges and cilantro as garnish.

Notes

For best flavor, marinate longer. Serve with a side of Mexican-style corn salad or cilantro lime rice. Perfect with limeade or iced tea.
