Preparation

  • Begin by gathering all your fresh ingredients. If you haven’t cooked your chicken yet, grill, roast, or boil it until fully cooked, which should take about 20-30 minutes. Once cool, chop the chicken into bite-sized pieces.
  • While the chicken is cooking or cooling, chop your vegetables: halve the cherry tomatoes, dice the cucumber, and slice the red onion.

Mixing

  • In a large bowl, combine your mixed greens.
  • Toss in the prepared chicken, chopped veggies, and drizzle the sesame dressing over the top.
  • Season with salt and pepper to taste and toss everything gently to combine all the ingredients and coat them evenly with the dressing.

Serving

  • Serve immediately for the crispiest experience, or chill it in the fridge for a little while if you prefer a colder salad.

Notes

This salad can be made ahead of time. Store the dressing separately until you're ready to serve to keep the greens fresh and crisp. Avoid over-dressing and start with half the dressing, adding more as needed. Leftovers can be stored in an airtight container in the fridge for up to 2 days, but reheating is not recommended.
