  • 1 cup seedless grapes, halved
  • 1/2 cup pecans, chopped
  • 1/2 cup Greek yogurt Or mayonnaise for a creamier option
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • to taste Salt and pepper

Preparation

  • If you haven’t cooked your chicken yet, poach or grill it until it’s fully cooked. Allow it to cool before dicing.
  • In a large mixing bowl, combine Greek yogurt (or mayonnaise), Dijon mustard, honey, salt, and pepper. Whisk until smooth and creamy.
  • Add the diced chicken, halved grapes, and chopped pecans into the bowl with the dressing. Gently fold all the ingredients together, making sure everything is evenly coated.
  • Give your chicken salad a taste! Adjust seasoning with more salt, pepper, or honey to suit your preference.
  • Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld. Serve it chilled, either on its own, on a bed of greens, or as a filling in sandwiches.

Notes

This salad keeps well in the fridge for 3-4 days. Feel free to use leftover cooked chicken or rotisserie chicken to save time. Variations include swapping grapes for apples or using walnuts instead of pecans.
