Preparation

  • In a large pot, heat the olive oil over medium heat. Add the diced onion, sliced carrots, and sliced celery. Sauté for about 5 minutes until the vegetables are tender.
  • Add the minced garlic to the pot and cook for an additional minute until fragrant.
  • Carefully pour the chicken broth into the pot, stirring to combine.
  • Stir in the shredded chicken, dried thyme, dried parsley, and salt and pepper. Allow it to simmer for 10 minutes.
  • Add the egg noodles to the pot and cook according to the package instructions, usually about 7-9 minutes, until they're tender.
  • Taste the soup and adjust the seasoning if necessary. Add more salt or pepper to suit your taste.
  • Ladle the soup into bowls and enjoy your comforting homemade dish!

Notes

For enhanced flavor, you can add your favorite herbs like rosemary or bay leaves. Store leftovers in airtight containers for 3-4 days, or freeze for up to 3 months.
