Cuisine Italian
- 4 boneless, skinless chicken breasts
- salt and pepper to taste
- 1 cup all-purpose flour
- 2 tablespoons olive oil
- 1 cup sliced mushrooms cremini or button mushrooms work well
- 2 cloves garlic minced
- 1 cup chicken broth low-sodium recommended
- 1 cup heavy cream
- ½ cup grated Parmesan cheese
- fresh parsley for garnish
Prepare the Chicken: Season the chicken breasts with salt and pepper, then coat them lightly with flour, shaking off any excess.
Sear the Chicken: Heat the olive oil in a large skillet over medium-high heat. Once the oil is hot, add the chicken breasts and cook for about 4-5 minutes per side until golden brown. Transfer the chicken to a plate.
Cook the Mushrooms: In the same skillet, add the sliced mushrooms and cook for 3-4 minutes until they are tender. Add in the minced garlic and stir for an additional minute until fragrant.
Add Flavor: Pour in the chicken broth, scraping any brown bits from the bottom of the pan. Bring it to a simmer and cook for about 5 minutes.
Make It Creamy: Lower the heat and stir in the heavy cream and grated Parmesan cheese. Cook until the mixture is thickened, about 3-5 minutes.
Combine: Return the chicken to the skillet, spooning the sauce over the top. Cook for an additional 5 minutes until the chicken is cooked through.
Serve and Garnish: Plate the chicken Lombardy, drizzling with extra sauce, and garnish with fresh parsley. Enjoy!
