Main Ingredients

  • 2 cups cooked, shredded chicken Can use rotisserie chicken for quicker preparation.
  • 1 cup mixed vegetables (like peas, corn, and carrots) Vegetable variations can include broccoli, bell peppers, or green beans.
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 cup shredded cheddar cheese Optional, but adds great taste.
  • 1 package (8 oz) refrigerated biscuit dough

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a large bowl, combine cooked, shredded chicken, mixed vegetables, cream of chicken soup, milk, garlic powder, onion powder, thyme, and half the cheddar cheese (if using). Mix until well combined.
  • Pour the filling mixture into a greased 9x13 inch baking dish, spreading it evenly.
  • Open the biscuit dough and cut each biscuit in half. Arrange biscuit halves on top of the chicken mixture to cover the filling.
  • Sprinkle remaining cheddar cheese over the biscuit layer.
  • Bake in the preheated oven for about 30 minutes, or until the biscuits are golden brown and the filling is bubbling.
  • Remove from the oven and allow to cool for a few minutes before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Freeze for 2-3 months for longer storage. Reheat in the oven at 350°F (175°C) for 20-30 minutes until heated through.
