  • 1 cup cooked chicken, shredded (use rotisserie or grilled)
  • 1 ripe avocado diced
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped fresh cilantro
  • 1 medium lime (juiced)
  • Salt and pepper (to taste)

Preparation

  • Start by ensuring your rice is cooked and fluffy. If you’re using leftover rice, it’s perfect!
  • Prepare the chicken by shredding it into bite-sized pieces. Dice the ripe avocado, tomatoes, and chop the cilantro.

Mix the Chicken

  • In a medium bowl, combine the shredded chicken, lime juice, salt, and pepper. Mix well to let those flavors meld together.

Layer the Dish

  • In a serving dish or individual bowls, start by placing a generous scoop of the cooked rice at the bottom. Press it down lightly to create a compact layer.
  • Next, layer on the marinated chicken mixture.
  • On top of the chicken, add the diced avocado and tomatoes, spreading them evenly across your stack.
  • Finally, sprinkle the chopped fresh cilantro on top.

Serve

  • Serve immediately while everything is fresh and vibrant. Enjoy with your choice of toppings!

Notes

For vegetarian options, substitute chicken with chickpeas or black beans. Store leftovers in an airtight container in the fridge for up to 2 days. This dish doesn’t freeze well due to the avocado.
