  • 1 package cornbread mix follow package instructions
  • 1 can (15 oz) black beans drained and rinsed
  • 1 cup shredded cheese cheddar or your choice
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 cup corn kernels fresh, frozen or canned
  • 1/2 cup diced onions
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • to taste Salt
  • to taste pepper

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and grease a baking dish to prevent sticking.
  • Prepare the cornbread mix according to package instructions in a bowl.
  • In a mixing bowl, combine the black beans, diced tomatoes, corn, diced onions, chili powder, cumin, salt, and pepper. Mix well.
  • Spread this mixture evenly across the greased baking dish.
  • Pour the cornbread batter over the bean mixture, ensuring it's evenly covered.
  • Sprinkle the shredded cheese on top.

Baking

  • Bake in the preheated oven for about 25-30 minutes or until the top is golden brown and a toothpick inserted into the center comes out clean.
  • Let it cool for a few minutes, then slice and serve with your choice of toppings!

Notes

Substitutions: You can switch black beans for kidney beans or pinto beans. To boost protein, add cooked ground chicken or beef. If cheese browns too quickly, cover with aluminum foil during baking. Leftovers can be refrigerated for 3-4 days or frozen for up to 3 months; reheat at 350°F (175°C) for 15-20 minutes.
