  • 1 pound ground beef Use lean ground beef for less grease.
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 15 ounces enchilada sauce Store-bought or homemade.
  • 8 small flour tortillas
  • 2 cups shredded cheddar cheese Feel free to mix with other cheese varieties.
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large skillet over medium heat, cook the ground beef until browned, about 5-7 minutes. Drain excess fat.
  • Add chopped onion and garlic to the skillet, sautéing until translucent, about 3-5 minutes.
  • Stir in the enchilada sauce, cumin, chili powder, salt, and pepper. Allow the mixture to simmer for a few minutes.
  • Warm the tortillas in a microwave for about 30 seconds to make them pliable.
  • Spread a thin layer of beef mixture onto each tortilla, sprinkle some shredded cheese, and then roll them up tightly.
  • Place the rolled tortillas seam-side down in a baking dish, and pour any remaining enchilada sauce on top.
  • Sprinkle the remaining cheese over the top and pop the dish into the oven.
  • Bake for about 20 minutes, or until the cheese is melty and golden.
  • Serve hot and top with your choice of garnish.

Notes

For a spicier version, add diced jalapeños or a splash of hot sauce to the beef mixture. You can prepare the enchiladas a day in advance and bake them when ready. Keep an eye on them to ensure they do not overbake.
