Preparation

  • Line a baking sheet with parchment paper and set it aside.

Making the Syrup

  • In a medium saucepan, combine the sugar and water. Stir over medium heat until the sugar is fully dissolved.
  • Add the cashews to the pan and stir gently to ensure they are well-coated with the sugary mixture.
  • Continue cooking the cashews over medium heat, stirring constantly for about 10-15 minutes until the sugar mixture thickens and coats the cashews.

Final Touches

  • When the cashews are golden brown, remove them from heat and stir in the vanilla extract, salt, and cinnamon (if using).
  • Quickly transfer the cashews onto the prepared baking sheet, spreading them into an even layer. Allow them to cool completely.
  • Once cool, break apart any clumps and enjoy your homemade candied cashews!

Notes

Store leftover cashews in an airtight container at room temperature for up to two weeks. Use a quick toss in the oven at 300°F to revive them.
