Base Ingredients

  • 1 bag tortilla chips
  • 2 cups shredded cheese (cheddar or Monterey Jack)

Toppings

  • 1 cup canned black beans, rinsed and drained
  • 1 cup guacamole
  • 1 cup salsa
  • 1 cup sliced jalapeños (fresh or pickled)
  • to taste chopped cilantro Optional garnish
  • to taste sour cream Optional garnish
  • to taste chopped green onions Optional garnish

Preparation

  • Build a campfire and let it burn down until you have a nice bed of hot coals or use a grill grate.
  • In a large piece of aluminum foil (about 18 inches long), create a base layer with half of the tortilla chips, spreading them out evenly.
  • Sprinkle half of the shredded cheese over the chips. Then add the black beans, jalapeños, and any other toppings you like at this stage.
  • Layer the remaining chips on top, followed by the rest of the cheese. Feel free to pile on more toppings if you're feeling adventurous.
  • Fold the aluminum foil around the nachos to create a tight package, sealing it to ensure the heat and steam are contained.
  • Place the foil pack over the hot coals for about 5–10 minutes, or until the cheese is bubbly and melted.
  • Carefully open the foil pack (watch out for steam!) and serve with guacamole and salsa drizzled on top, along with any other garnishes you wish to add.

Notes

To enhance your nacho experience, pair these with a zesty fruit salad or grilled vegetable medley. Drinks like lemonade or iced tea work well!
