Main ingredients

  • 1 lb ground beef or turkey Use lean ground meat for a healthier option.
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies
  • 1 cup rice, cooked Use any type of rice you prefer.
  • 1 packet taco seasoning Use spicy taco seasoning for a spicier dish.
  • 2 cups shredded cheese Cheddar or a Mexican blend works well.
  • 6 pieces flour tortillas, cut into quarters Tortillas can be whole or cut as needed.

For Serving

  • Sour cream For topping.
  • Avocado For topping.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a skillet, cook the ground beef or turkey over medium heat until browned. Drain the excess fat.
  • Stir in the black beans, corn, diced tomatoes, cooked rice, and taco seasoning.

Assembly

  • In a large baking dish, layer half of the tortillas, half of the meat mixture, and half of the cheese. Repeat the layers.

Baking

  • Bake for 25-30 minutes, until the cheese is bubbly.
  • Let cool slightly, then serve topped with sour cream and avocado.

Notes

Feel free to customize with additional veggies or different proteins. Great for meal prep and can be frozen before baking.
