Ingredients
  

Main Ingredients

  • 1 lb ground beef (or turkey) Can use lean beef for a healthier option.
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with green chilies Use hot tomatoes for a spicier kick.
  • 1 packet taco seasoning
  • 6 pieces tortillas, cut into strips
  • 2 cups shredded cheese (cheddar or Mexican blend) Pepper jack cheese can be used for added flavor.

For Serving

  • Sour cream Optional topping.
  • chopped green onions Optional topping.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a skillet over medium heat, brown the ground beef until cooked through. Drain excess fat.
  • Stir in black beans, corn, diced tomatoes, and taco seasoning. Cook for about 5 minutes.

Layering

  • In a greased baking dish, layer half of the tortilla strips at the bottom.
  • Pour half of the beef mixture over the tortillas.
  • Sprinkle with one cup of cheese.
  • Add another layer of tortilla strips, the remaining beef mixture, and top with the remaining cheese.

Baking

  • Bake for 25-30 minutes or until the cheese is melted and bubbly.
  • Let cool for a few minutes before serving. Top with sour cream and green onions if desired.

Notes

To store leftovers, let it cool completely and cover tightly with plastic wrap or aluminum foil. Refrigerate for up to 3-4 days. Reheat in the oven at 350°F until warm.
