Easy Burrito Casserole

Ingredients
  

  • 1 lb lean ground beef
  • 1 packet taco seasoning mix
  • 1 can 10.5 oz cream of mushroom soup (low-sodium preferred)
  • 1 can 10.5 oz cream of chicken soup (low-sodium preferred)
  • 1 cup sour cream
  • 1 can 15 oz refried beans
  • 6 large flour tortillas
  • 2 cups shredded cheddar cheese or Mexican cheese blend
  • 1 can 10 oz diced tomatoes with green chilies, drained
  • 1 cup salsa
  • 1 small onion diced
  • 2 tablespoons olive oil for cooking

Instructions
 

  • Cook the Beef: In a large skillet, heat olive oil over medium heat. Add diced onions and cook until soft, about 3-4 minutes. Add the ground beef and cook until browned, breaking it up as it cooks. Drain any excess fat, then stir in the taco seasoning and ¼ cup water. Let it simmer for 2-3 minutes until fully combined and thickened. Remove from heat.
  • Prepare the Creamy Mixture: In a large mixing bowl, combine the cream of mushroom soup, cream of chicken soup, and sour cream. Stir until smooth and set aside.
  • Layer the Casserole: Spread 1/3 of the creamy soup mixture on the bottom of the prepared baking dish. Lay 2 tortillas over the mixture (you may need to tear them to fit). Top with half of the seasoned ground beef mixture, half of the refried beans, 1/3 of the cheese, and a layer of salsa and diced tomatoes with green chilies. Repeat the layers, ending with a final layer of the soup mixture and the remaining shredded cheese.
  • Bake the Casserole: Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
  • Serve: Let the casserole rest for about 5 minutes before slicing. Serve with optional toppings like chopped cilantro, avocado, or a dollop of extra sour cream.
