  • 2 large eggs
  • 1 cup rolled oats
  • 1/4 cup honey or maple syrup Use your preference for sweetness.
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1 cup fresh or frozen blueberries Gently fold in to avoid smashing.

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, combine the cottage cheese, eggs, honey (or maple syrup), and vanilla extract. Mix until well incorporated.
  • Add in the rolled oats, baking powder, and cinnamon, and stir until everything is combined.
  • Gently fold in the blueberries to avoid smashing them.
  • Pour the mixture into a greased baking dish (about 8×8 inches works well) and spread it evenly.

Baking

  • Bake in the preheated oven for 30 to 35 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
  • Remove from the oven and let it cool slightly before serving.

Notes

For a more decadent texture, consider using whole-fat cottage cheese instead of low-fat. If you have leftovers, store them in the refrigerator for up to 3 days or freeze for about a month. Reheat individual portions in the microwave or entire dish in the oven.
