  • 2 cups cooked salmon, flaked
  • 1 cup cooked rice
  • 1 cup broccoli florets (fresh or frozen)
  • 1 cup cream of mushroom soup
  • ½ cup sour cream
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • to taste Salt and pepper
  • 1 cup shredded cheese (optional for topping)
  • Fresh herbs for garnish (optional)

Preparation

  • Preheat your oven to 350°F (175°C).
  • Cook the salmon and rice according to package instructions.
  • In a large mixing bowl, combine flaked salmon, cooked rice, broccoli, cream of mushroom soup, sour cream, garlic powder, onion powder, salt, and pepper. Stir until well incorporated.
  • Spoon the mixture into a greased 9×13-inch casserole dish, spreading it evenly.
  • If desired, sprinkle shredded cheese over the top of the casserole.
  • Bake in the preheated oven for 25-30 minutes, or until hot and bubbly, and the cheese is melted and slightly golden.
  • Let the casserole cool for a few minutes, garnish with fresh herbs if desired, and serve.

Notes

If you don’t have rice on hand, quinoa or pasta can be used as substitutes. Ensure the salmon is fully cooked before mixing into the casserole. Store leftovers in an airtight container for up to three days; reheat at 350°F until warmed through.
