For the Chicken

  • 4 pieces boneless, skinless chicken breasts Use heavy chicken breasts for juicier results.
  • 4 slices Swiss cheese Feel free to customize with different cheese.
  • 4 slices turkey breast Or your preferred deli meat.
  • 1 cup bread crumbs Preferably seasoned.
  • 1/2 cup Dijon mustard For stuffing the chicken.
  • 1/4 cup melted butter For coating the chicken.
  • Salt and pepper To taste.

Preparation

  • Preheat your oven to 375°F (190°C).
  • Place the chicken breasts on a cutting board and slice them horizontally to create a pocket, being careful not to cut all the way through.
  • Spread a teaspoon of Dijon mustard inside each chicken breast pocket, then layer in a slice of turkey followed by a slice of Swiss cheese.
  • Close the chicken pocket and secure it with toothpicks if necessary.
  • Dip each stuffed chicken breast in melted butter, then roll it in breadcrumbs until well-coated.

Cooking

  • Place the chicken in a baking dish, season with salt and pepper, and bake for 25-30 minutes or until the chicken is cooked through and the juices run clear.
  • Once done, remove from the oven, let it rest for a few minutes, and then serve with your favorite sides.

Notes

To achieve the best results, use thicker chicken breasts and customize fillings based on preference. Allow the chicken to rest after baking to keep juices locked in. Store leftovers in an airtight container or freeze for later use.
