Preparation

  • Begin by preheating your oven to 325°F (165°C).
  • Pat your beef chuck roast dry with paper towels and season generously with salt and pepper.
  • In a large oven-safe skillet, melt 1/2 of the butter over medium-high heat and sear the roast on all sides until golden brown.
  • Remove the roast temporarily and sauté sliced onions in the pan until they soften, then add minced garlic.
  • Return the beef roast to the skillet, nestling it among the onions and garlic, and pour in the beef broth and Worcestershire sauce.
  • Dot the remaining butter on top of the roast, cover the skillet tightly, and transfer it to the oven.

Cooking

  • Allow the roast to bake in the oven for about 3 to 4 hours, until the internal temperature reaches 190°F.
  • Once done, remove from the oven and let it rest for 15 minutes before slicing against the grain.
