Ingredients

  • 2 cups cooked pinto beans or canned, drained
  • 1 cup vegetable broth or water
  • 2 tablespoons olive oil
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 teaspoon cumin
  • salt and pepper to taste

Instructions

  • Prep the Beans: If using canned beans, drain and rinse them well. If using dried beans, soak and cook them until tender.
  • Sauté the Aromatics: In a skillet over medium heat, add the olive oil. Once hot, add the chopped onion and sauté until softened, about 3-5 minutes. Then, add the minced garlic and cumin, cooking for another minute until fragrant.
  • Add the Beans: Stir in the cooked pinto beans and pour in the vegetable broth (or water). Allow this mixture to simmer for about 5-7 minutes.
  • Mash and Simmer: Using a potato masher or fork, mash the beans to your desired consistency. If you prefer creamier beans, you can add a bit more broth as needed. Season with salt and pepper to taste.
  • Finish Up: Once the desired consistency is reached, remove from heat. It's time to serve your delicious homemade refried beans!
