  • 1 pound chicken breast, cut into bite-sized pieces
  • 1 cup cashews, roasted
  • 1 bell pepper, chopped (any color)
  • 1 cup broccoli florets
  • 1 onion, sliced
  • 3 cloves garlic, minced

Sauce Ingredients

  • ¼ cup soy sauce
  • 2 tablespoons oyster sauce
  • 2 tablespoons cornstarch
  • 1 tablespoon sugar
  • 1 tablespoon sesame oil
  • to taste salt and pepper

Preparation

  • In a bowl, combine the chicken pieces with cornstarch, a pinch of salt, and pepper. Toss until well coated.
  • In a large wok or skillet, heat sesame oil over medium-high heat. Once hot, add the chicken pieces and cook until golden brown and cooked through (about 5-7 minutes).
  • Stir in the bell pepper, broccoli, and onion. Cook for an additional 3-4 minutes, allowing the veggies to become tender yet crisp.

Sauce Creation

  • In a small bowl, mix together the soy sauce, oyster sauce, and sugar. Pour this mixture over the chicken and vegetables, stirring until everything is coated.
  • Just before serving, toss in the roasted cashews for that delightful crunch.
  • Serve hot over rice or noodles.

Notes

For added tenderness, you can swap out the chicken breast for thigh meat. To spice it up, add a pinch of red pepper flakes. Don't forget the cornstarch coating for moisture and texture. Avoid overcooking the vegetables for the best experience.
