Preparation

  • Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners or grease it lightly.
  • In a large bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and nutmeg until well combined.
  • In a separate bowl, beat the egg, then add the milk, vegetable oil, and vanilla extract. Mix until smooth.
  • Pour the wet ingredients into the dry mixture and stir gently until just combined. Be sure not to overmix! Fold in the diced apples, distributing them evenly throughout.
  • Spoon the batter into the muffin cups, filling each about two-thirds full to allow for rising.
  • Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  • Once baked, let the muffins cool in the tin for a few minutes before transferring them to a wire rack. If desired, drizzle with your powdered sugar glaze once cooled.

Notes

Store muffins in an airtight container at room temperature for up to three days or refrigerate for up to a week. For longer storage, freeze them for up to three months. Reheat in the microwave or oven for a few minutes.
