Ingredients
  

For the apple filling

  • 4 cups apples, peeled, cored, and sliced (about 4 large apples)
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon lemon juice

For the oat crust and topping

  • 1.5 cups rolled oats
  • 1 cup all-purpose flour Can substitute with gluten-free flour blend
  • 1/2 cup brown sugar
  • 1/2 cup melted unsalted butter (or coconut oil for a dairy-free option)
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, combine the sliced apples, brown sugar, cinnamon, and lemon juice. Toss until the apples are well coated.
  • In another bowl, mix together the rolled oats, flour, brown sugar, melted butter, salt, and baking powder until crumbly.

Assembly and Baking

  • Grease a 9x9-inch baking pan and press half of the oat mixture evenly into the bottom.
  • Layer the apple mixture on top, then crumble the remaining oat mixture over the apples.
  • Bake in the preheated oven for 25-30 minutes or until the topping is golden brown and the apple filling is bubbly.
  • Remove from the oven and allow it to cool for at least 10 minutes before slicing into bars.

Notes

Store in an airtight container in the refrigerator for up to 4 days, or freeze for up to 3 months. Reheat in the oven at 350°F (175°C) for 10-15 minutes.
