  • Begin by cutting the fresh watermelon into bite-sized cubes, approximately one inch in size.
  • In a large mixing bowl, combine the cubed watermelon, crumbled feta cheese, and chopped mint leaves. Gently toss them together to distribute the ingredients evenly.
  • Drizzle the balsamic reduction over the salad mixture. Start with a drizzle, and you can always add more to taste.
  • Add a sprinkle of salt and pepper to enhance the flavors of the ingredients. Toss everything together gently, ensuring not to crush the feta or watermelon.

Notes

Store leftovers in an airtight container in the refrigerator for up to two days. Best enjoyed fresh, but if storing, add fresh mint or feta before serving. Do not freeze.
