Main Ingredients

  • 2 racks baby back ribs (approximately 3-4 pounds)
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon smoked paprika
  • 1 cup barbecue sauce (your favorite brand)
  • 1 cup apple cider vinegar
  • 1 cup water

Preparation

  • Start by removing the membrane from the back of the ribs to make them tender and allow flavors to penetrate better.
  • In a small bowl, mix salt, black pepper, garlic powder, onion powder, and smoked paprika. Rub this mixture generously over the ribs.
  • Cut the rib racks into halves or thirds for easy fitting into the Instant Pot.
  • Pour the apple cider vinegar and water into the Instant Pot, generating steam for cooking.

Cooking

  • Place the rack of ribs inside the pot, close the lid, set the valve to sealing, and select manual or pressure cook for 25 minutes.
  • Let the pressure naturally release for 10 minutes, then switch the valve to venting to release remaining steam.
  • Carefully remove the ribs from the Instant Pot and brush them with barbecue sauce. Optionally, broil them in the oven for a few minutes to caramelize the sauce.
  • Slice the ribs and serve hot with extra sauce on the side.

Notes

Adjust the barbecue sauce sweetness to your liking. Store leftovers in airtight containers for up to 3 days in the refrigerator or freeze for up to three months.
