Preparation

  • In a large mixing bowl, combine warm water and yeast. Let it sit for about 5 to 10 minutes until it becomes frothy.
  • Add in the flour, olive oil, and salt to the yeast mixture. Stir using a wooden spoon or your hands until a sticky dough forms.
  • Transfer the dough to a floured surface and knead for about 5 minutes until it’s smooth and elastic.
  • Form the dough into a ball and place it in a lightly oiled bowl. Cover with a damp cloth or plastic wrap and let it rise in a warm area for about 1 hour, or until it doubles in size.

Baking

  • Grease a baking sheet with olive oil. Once the dough has risen, punch it down and transfer it to the prepared baking sheet.
  • Press the dough out into a rectangle or oval, about 1 inch thick. Use your fingers to create dimples all over the surface.
  • Drizzle with more olive oil and sprinkle with your chosen herbs and a pinch of salt. Let it rest for another 20-30 minutes.
  • Preheat your oven to 425°F (220°C) and bake for 20-25 minutes, or until golden brown.
  • Remove from the oven and let it cool slightly before slicing. Enjoy your homemade focaccia warm!

Allowing the dough to rise fully is crucial for a light, airy focaccia. Experiment with toppings like garlic, olives, or sun-dried tomatoes for added flavor. Use good quality extra virgin olive oil for the best result.
